This item is exactly what I needed. I am using this to scrape the chocolate off the top of my Polycarbonate molds when making chocolate truffles. The blade is big enough to do the entire mold in one scrape and its thick enough to make sure it does not bend. I love the handle as well. fits perfectly in my hand and allows a better grip when doing this. also. the back end of the handle is plastic so when I use it to bang on the side of the mold to remove air bubbles I don't make gouges in the mold.I should have bought this in the first place. I am thinking of getting another.
